Fancy Fixins'
So last night I made Pork Tenderloin, fancy I know. Well I'll have you know that we got it on sale at Kroger for about $3! How crazy! So I kind of go off of Paula Deen's recipe for Pork Tenderloin, kind of. I didn't abandon her just because she cooks with pounds of butter and has diabetes. The only route I took differently from her recipe is that instead of following her cooking instructions I simply pre-heated the oven to about 425 and then I rubbed the pork down with a mix of oil, salt, pepper, fresh thyme (leftover), dried rosemary and dried basil. Then I popped that whole sucker into the oven and cooked it for about 25 minutes, then I let it sit out for about 10 more minutes after that until the temperature of the pork was 155. I also made some roasted broccoli and roasted tomatoes. Two of Caleb's favorites! Also, we had two nice surprises for dinner, Kristian and Andy!

And Andy only got a slice of Pork, he wasn't very hungry, I basically had to shove it down his throat... but maybe that's because he hated it... Hmmm....
