So, positive feedback for post numero 1 makes me a happy, happy girl (insert Anne Burrell promo - if you don't know who she is, that's disgraceful, she's pretty awesome, google her, or better yet, click here)
So back to my disaster of something called dinner that took place last night. A couple of weeks ago I found the most delicious sounding recipe, Spinach Lasagna Rollups, found via Pinterest. So for a side note, I almost NEVER follow recipes exactly. Mostly because I'm too lazy to get out the measuring cups, or my head is too big and I know that my ways are better (sarcastic laugh). So for this recipe, I did follow most instructions; however, I used Turkey meat in the sauce, I added a cup of dry red wine in the sauce, added mozzarella cheese on top also I did not follow her marinara recipe I did my own. Oh and I used WAY WAY... WAY more garlic than called for. So strike that, no I did not follow the recipe... So back to why it was a disaster. I started the sauce by sauteing the onions in some oil, garlic, oregano, Italian seasoning, and more garlic. Then I added about 5 Roma tomatoes and two cans of crushed tomatoes. Then about a cup of dry red wine. (Red wine makes it SO SO SO SO much better! Do it, try it, love it) So, after starting the sauce (which needs to lightly simmer for about 2 hours), Caleb decides that we should take Hercules outside for a walk and to play his most favorite game ever, Frisbee.
Now, as you can see he is the happiest boy in the world. Excuse his long, mangy hair... He is going to the groomer this weekend.
So we come back and the sauce is not even simmering, so like a genius I turn the heat up then proceed to go watch a movie I recorded. I am not ashamed to say (even though Caleb is) I had recorded Zenon: Z3. Disney Channel ruled my life as a child and this brings back wonderful memories. Anyways, so I get so into this great movie that I forget that I have turned up the heat on my sauce... and viola, it burns, it burns real bad. So I rush to my computer to find remedies for very badly burned spaghetti sauce. I find quite a few.. mostly this one.
So what I did:
1. Poured it into a new pan (I was using my dutch oven and I just poured it into a regular saute pan).
2. Added more tomato juice (about 1 cup), some sugar (about 2 tbs), and a little extra wine. This really didn't help the burned nasty taste that was my sauce. What really put out that gross taste and completely saved my sauce... MILK! About 1 1/2 cups of milk was added and you could not even tell that it was burned before! It was so crazy! To the left you can see the remains of the pan as well as my thumb with a band-aid... yes I cut my thumb on my glass baking dish from the side that was chipped... it was so gross.
So after saving my sauce and making the rolls I was able to bake them up and they turned out to be just amazing.
However, they made WAY TOO MUCH. Hence 8 Rolls left-over (Caleb ate 2 rolls and I ate 1 and 1/2 plus my home-made garlic bread). See the large amount of leftovers -->
Also, since I'm so kind, I brought a roll-up to work (after eating one for lunch) for Stephanie and Kristian to enjoy... I know, I know, just call me Santa Claus.
So that is my disaster that turned into a miracle thanks to MILK! (Caleb would have died had he known that his meal was saved by milk... he thinks its grosser than poop). Now I'm off to save more recipes!
PS. I've started using My Fitness Pal - although it is typically used to lose weight (don't worry I'm not dieting/losing weight/going anorexic or anything). I've started it to see how much protein and vitamins I am eating everyday and MAN they told me I should only be eating 1,410 calories... It is lunch time and I've eaten my yogart with granola, string cheese, an orange, my one spinach roll-up left over, a glass of milk and now I only have 500 calories left to eat for the day! That is just not enough for me... We will see how long this lasts.....
